The deep gravel banks around the town of Pauillac are the heartland of Cabernet Sauvignon, making these both the most revered and the longest lived of Bordeaux’s great wines.  For many wine lover, King Cab’s greatest wines are the three Pauillac First Growths (Lafite, Latour and Mouton-Rothschild).

When to drink

These wines definitely need cellaring to allow the powerful and forbidding tannins of youth to mellow and the perfume to emerge.  A few examples bloom with friendly fruit from an early age, while others retain the froideur of an assiduous school prefect throughout their long lives.  Eight to ten years will be enough to bring most wines to a peak and the should drink well for another decade thereafter, perhaps two decades for the best wines.

Good Margaux beckons with seductive fragrance enriching the Medoc’s trademark blackcurrant and cedarwood perfume with violets and rose petals, roasted nuts and vanilla, plums and hedgerow berries,  The body is certainly lighter and more supple than in wines from the communes to the north, yet by no means wanting for intensity or substance.

St.Julien Wine

It’s all about balance a perfect balance between substance and delicacy, opulence and austerity between the necessary brashness of youth and the lean-limbed genius of maturity. St-Julien is the smallest of the Haut-Medoc communal appellations but with the greatest concentration of top-class gravelly vineyard land.

When to drink

St.Julien’s charm is in part due to softer-edged tannins than Pauillac and most wines are enjoyable from six years of age up to 10 or 15. But wait until 10 years to experience the full harmony of the blackcurrant and cedar in the best wines, which should stay at their peak for easily another decade.

A restrained cedarwood perfume and lean but mouthwatering blackcurrant fruit set St.Julien somewhere between the gravitas of Pauillac and the airier charms of Margaux. These wines are satisfyingly rich and rounded, with perhaps a dose of cherries swirled deep into the fruit perhaps a scoop of chocolate hinting at a hedonistic heart beating somewhere behind the Saville Row formality of the tannins.
